High St Hotel is officially returning to life in late November 2025, and yes, it is absolutely open and active. Prahran locals are about to get their new favourite hangout back, and it arrives with a sharper identity, a big community focus and a serious food offering that still keeps the spirit of a good local pub intact.

A reimagined classic for today’s Prahran crowd
Hospitality veterans Nic and Bianca Gordon, known for Blue Tongue Wine Bar, have taken the reins of High St Hotel and rebuilt it into a multi-space hub designed for anyone who lives, works or simply wanders through the suburb. Executive Chef Sebastian McQuarrie rounds out the leadership team, bringing some real culinary weight to the venue.
“Our vision is to reimagine a once iconic venue into a vibrant and multi-space destination, catering for all that work, live and play in our community and beyond our dynamic postcode,” says Nic Gordon.

The design direction lands somewhere between classic British racing green and that cosy, old-school pub nostalgia, all lifted with modern finishes. You’ll find a lively front bar, a polished dining room and a bright beer garden that doubles as Prahran’s new go-to spot for live sport. Bianca’s mum even shaped the interiors, giving the space a warm family-led feel that sets it apart from the cookie-cutter crowd.
Serious food that still feels like a pub
McQuarrie has created a menu that marries technique with comfort. Think whole rotisserie chicken or porchetta with two sides, crab and prawn toast with XO mayo, deep fried beef and mozzarella lasagne bites and an eye fillet steak frites served with bone marrow butter or red wine jus.
“Sebastian brings a stellar resume of culinary leadership across high-performing hospitality venues,” says Bianca Gordon. “His appointment signals a serious commitment to food quality, consistency, and an elevated yet approachable dining experience.”
The new home of live sport in Prahran
If you love a game day atmosphere, this place is ready for you. A 3.5m by 2.5m superscreen and five additional large screens are spread across the venue, creating a setup that rivals some sports bars. The beer garden keeps things social, relaxed and easy whether you’re glued to the match or catching up with mates.

Built on family values and real community impact
The heart of High St Hotel is its family-first spirit. The venue manager and assistant venue manager are Nic’s nephew and cousin, a detail that reinforces the hotel’s commitment to trust, consistency and genuine connection.
Their community focus extends beyond the walls of the hotel. A $10,000 annual community grant will support local sporting clubs, making High St Hotel a true partner for Prahran’s grassroots groups.
