Melbourne is preparing for one of its most elegant culinary experiences, and bookings are now open. That’s Amore Cheese is bringing together the worlds of Italian burrata and French champagne for a night that celebrates craftsmanship, flavour and tradition. Burrata with Champagne has always been a dream pairing, and this event places the combination at the centre of a luxurious evening.
The night is presented by That’s Amore Cheese and champagne specialist Sally Hillman. Both are respected in their fields. Both understand the depth behind these ingredients. Guests are invited to savour handcrafted burrata at its velvety best. Each course is matched with expressive, small-batch grower champagnes chosen for their character and purity.

The evening is hosted by two leading voices. Giorgio Linguanti, founder of That’s Amore Cheese and author of Burrata: A Journey Through Craft, Flavour & Tradition. Sally Hillman, author of Celebrating Champagne: A Wine For All Seasons. Together, they guide guests through the stories and regional traditions that make these delicacies so iconic.
The event takes place inside The Cheesery at Chadstone’s Market Pavilion. It is an intimate space that suits the occasion. Head Chef Carlos Naspiran has designed a four-course menu that showcases burrata in creative and indulgent ways. Sally has paired each dish with boutique champagnes from respected growers. Each wine highlights a different expression of the region.

The culinary journey begins on arrival. Guests enjoy gougères, oysters and a curated selection of That’s Amore cheeses. A glass of Laherte Frères Blanc de Blancs Brut Nature sets the tone. Clean, bright and refined.
The entree is marinated salmon with burrata, avocado, lemon ricotta and basil oil. It is matched with Laherte Frères Ultradition NV. The champagne lifts the dish and brings a gentle freshness.
The main offers something richer. Casarecce with pork ragù and soft burrata. Dehours Grande Reserve NV gives the dish depth and structure without overpowering it.
Dessert is both playful and surprising. Burrata with strawberries and white chocolate. André Clouet Rosé No.3 NV brings a delicate finish.
